Indian-Style Chicken

We used to have curry chicken quite a lot last year, since its easy and Hadi likes to make it. (I, however, fail at using the curry paste :cries: ) There was a lot of variety of curry - roasted, braised, very very strong curry... But, funnily enough, we haven't had a single curry dish this year. So this is Hadi's very first curry of the year! And, surprisingly, its a different dish again! Curry is SO versatile! ;)

What you need:
3 chicken thighs
2 tablespoons garam masala
2 tablespoons tandoori masala
A LOT of instant curry paste (doesn't matter which brand, I guess, but we used A1 Best One)
A sprinkling of turmeric
Some cloves and star anise, a stick of cinnamon (and other WHOLE spices, if you wish)
Salt, for seasoning

What you do:

  1. Combine all ingredients in a small bowl. Place chicken in a medium bowl and pour over the sauce. Rub it in, and marinate overnight.
  2. Preheat an oven to 200 C. When hot, place the chicken on a roasting rack (careful to keep the marinade caked over the chicken, including any spices, if you can) and put into the oven.
  3. Roast the chicken until crispy and the juices run clear. The marinade might burn more than the chicken.

I thought this was a really good effort on Hadi's part. True, it had a lot of curry, of which I'm not a big fan, but it really tasted good. The overnight marination really helped, as the flavours seeped nicely into the chicken. The chicken was also nice and crispy, helped by the fact that it was put straight into a really hot oven. It would help if you can roast it on a roasting rack (so you don't have your chicken swimming in oil).

Hadi also made an "empty" curry sauce to go with the chicken, as Justin had requested it. You can make this the way you would usually make your favorite curry. Hadi just fried some onions and added some of the instant curry paste and water. I'm sure you can do better ;) Hee~ This sauce was a bit too strong for me, though Justin seemed to like it...

The chicken was actually vaguely reminiscent of CA Mohd chicken, only it was lacking some of the intensity. I think it would have been slightly better (and slightly oiler as well!) if you fried the chicken briefly before roasting it. But that's just way too much effort required. :P

    Not being from England I guess I can forgive you but I just had to point out that there is in fact at least one vegetable that has made people laugh.   2. Haha... well... yes, thank you for that. :P I didn't actually make up the quote, just so you know. I've never really thought about vegetables that can make you laugh before. But the video you gave a link to will certainly amuse some people I can think of. :P
